Merlin Cheeses was established in 1986, producing a hard goats’ milk cheddar cheese in two sizes and 24 varieties. All cheeses are waxed and vacuum packed, giving them a two year shelf life. Merlin is a family business using Welsh produced milk and sourcing local ingredients.
